Lenah was established to create markets for wallaby and possum meat from the belief it makes sense to produce food from the animals perfectly adapted to our environment. From a climate change perspective, the development of these markets is extremely important. Wallabies emit almost no methane, a very harmful greenhouse gas, whereas sheep and cattle do in large volumes. Thus wallaby meat can be eaten with a carbon free conscience.
Tasmanian wallabies have an enzyme present in their digestive system that negates the production of methane gas. Methane is produced in large quantities by other ruminant animals such as cattle, sheep and pigs. Methane gas emissions from livestock account for over 10% of Australia’s annual green house gas emissions. Our wallaby is virtually carbon neutral thanks to their unique digestive system. They are at harmony with their natural environment and have very little impact upon the land compared to domesticated livestock. A water consumption per kilo of edible meat is 70% less than sheep and almost 90% less than beef is another great advantage of wallaby. As a naturally occuring product, Tasmanian wallaby is the meat of choice for the environmentally conscious consumer.
Animal welfare is one of the cornerstones of our business. We undertake careful government controlled harvest of wallabies from their natural environment by a team of professional harvesters to ensure our welfare outcomes are the highest possible. These harvesters are required to operate to a strict Animal Welfare Code of Practice and are regularly audited against it by both Government and Company inspections. The core benefit of wallaby meat from an animal welfare perspective, is that it is from animals harvested humanely, directly from their natural environment without ever having been confined or handled by man. We believe Lenah Wallaby is one of the most animal welfare friendly meats in Australia.
We use all parts of the animals we harvest so there is minimal waste. We produce a range of portion controlled cuts and smallgoods for restaurants and the home cook as well as preservative free high quality pet food products. Wallaby skins and possum furs are important side products. Possum fur is sold on to be blended with merino wool creating a distinctive Tasmanian fibre and wallaby skins are made Into luxurious homewares and fashion items.
Wallaby is a high protein, low fat meat (0.05%). It’s low fat status makes it fantastic to cook with and ‘clean’ on the palate. It’s a very delicate meat aptly described as the “veal of kangaroo”. It’s also incredibly versatile with different cuts available for most traditional meat recipes.
