Venison steak with charred cabbage and plums

Ingredients
  • 1 pkt venison steaks
  • Salt and pepper, to taste
  • 2 wedges cabbage – wombok or green cabbage, about 2-3cm thick
  • 4 ripe plums, cut in half and seeds removed
  • Green beans, broccolini or other green veges

    Heat some olive oil in a pan on high heat, season and sear the venison steaks until a nice crust has formed. This will take approximately 2 minutes on each side. Turn the steaks 2-3 times to ensure a nice even sear.

    Remove the steaks from the pan and leave to rest.

    Using the same pan, add a little more olive oil and sear the cabbage wedges until caramelised and a nice dark brown colour (the darker the sear the sweeter the cabbage)

    Once seared on both sides, add the plums, skin side up. Cook for 1-2 minutes then turn over and turn of the heat.

    The venison will now be well rested. Slice across the grain and serve with the seared cabbage, caramelised plums and your favourite greens.
