Wallaby eye fillet wrap

Ingredients
  • 500 wallaby g eye fillets
  • 1 small onion, thinly sliced
  • 1 clove of garlic, thinly sliced
  • 1 large tomato, diced
  • 2 apples, cut into matchsticks
  • Chili sauce/hot sauce
  • Coleslaw
  • Fresh coriander
  • Tortilla wraps
Instructions

    1. Season and sear the wallaby fillets in a hot pan, add the onion and garlic and cook for about a minute. Pour the content into a large bowl and add the diced tomato and apples, tops with chili sauce and mix well.

    2. Toast your wraps and start with coleslaw then the wallaby mix, top with fresh coriander and roll it all up.
