2. Arrange the salad leaves in the bottom of a nice bowl, then start arranging the vegetables/fruits/garnishes in a way that they do not touch each other, you will soon run out of room and with that have a beautiful pattern.
4 3. Slice the wallaby fillets and arrange on top of your salad. Fill any gaps with picked parsley, mint leaves and other fresh herbs.
5 4. Place all the ingredients for the dressing in a jar and pour over the salad. Enjoy!
