Wallaby Fillet Salad

Ingredients
  • 1 pkt 400g wallaby fillets
  • 2 tbsp ground Tasmanian pepper berries
  • Salad leaves
  • 1 tomato, Radish, celery, red onion, cucumber, white peaches, yellow peaches, mint leaves, fresh parsley, pumpkin seed, sunflower seed, marinated olives, pickles vegetables clove of garlic, thinly sliced
  • Dressing: 4 tbsp balsamic vinegar, 8 tbsp extra virgin olive oil, 1 tsp Dijon mustard, 1 tsp honey, pinch of salt
  • Optional extras, any nuts, goats cheese, feta cheese

    1. Coat the wallaby fillets with ground pepper berries and season with salt. Sear in a hot pan about 2 minutes on each side, total cooking time should be about 3-4 minutes.

    The wallaby fillets does not need to be as rare as in the picture to enjoy.

    2. Arrange the salad leaves in the bottom of a nice bowl, then start arranging the vegetables/fruits/garnishes in a way that they do not touch each other, you will soon run out of room and with that have a beautiful pattern.

    3. Slice the wallaby fillets and arrange on top of your salad. Fill any gaps with picked parsley, mint leaves and other fresh herbs.

    4. Place all the ingredients for the dressing in a jar and pour over the salad. Enjoy!
