Wallaby patties

Ingredients
  • 2 pkts wallaby mince
  • Half a cup breadcrumbs soaked in half a cup milk
  • 1 onion, finely chopped
  • 1 garlic clove, minced
  • 2 tsp Dijon mustard
  • 1 tbs Worcestershire sauce
  • 2 tbs tomato paste
  • 2 eggs, whisked
  • 1 carrot, grated
  • 1 zucchini, grated and excess moisture squeezed out
  • 100 Optional, gm grated parmesan
  • Salt and freshly ground black pepper, to taste
  • Fresh herbs eg parsley, basil, oregano, chopped

    Place all the ingredients in a large bowl and mix well by hand.

    Form patties by hand. I like to them around 100 gm ea

    Patties can be made the day prior to cooking and stored in a sealed container in the fridge

    To cook, heat a frypan on high. When hot add olive oil.

    Cook the burgers until well cooked through. This will take 15 to 20 minutes
