Wallaby patties

Ingredients

wallaby mince
Half a cup breadcrumbs soaked in half a cup milk

onion,
finely chopped
1
garlic
clove, minced
2
tsp
Dijon mustard
1
tbs
Worcestershire sauce
2
tbs
tomato paste
2
eggs,
whisked
1
carrot,
grated
1
zucchini,
grated and excess moisture squeezed out

Optional, gm grated parmesan
Salt and freshly ground black pepper, to taste
Fresh herbs eg parsley, basil, oregano, chopped
Instructions

Place all the ingredients in a large bowl and mix well by hand.

Form patties by hand. I like to them around 100 gm ea

Patties can be made the day prior to cooking and stored in a sealed container in the fridge

To cook, heat a frypan on high. When hot add olive oil.

Cook the burgers until well cooked through. This will take 15 to 20 minutes
