3. Bread the Fillets: Dredge each wallaby fillet first in the flour, shaking off any excess. Then dip it into the egg mix, ensuring it's fully coated. Finally, press the fillet into the breadcrumb mixture, ensuring an even coating. Repeat for all fillets.
5 4. Heat the ghee in a large pan, over medium-high heat until it melts and starts to shimmer.
6 5. Carefully place the breaded wallaby fillets into the hot ghee. Cook for 2-3 minutes on each side or until golden brown and cooked through. Depending on the thickness of the fillets, you might need to adjust the cooking time.
7 6. Transfer the cooked schnitzel to a plate lined with paper towels to drain any excess ghee, sprinkle some sea salt flakes on top and a little parsley too if you have it.
8 7. Serve the wallaby schnitzel hot with lemon wedges on the side. You can also pair it with a fresh aioli, roasted potato wedges, or your favourite vegetable side dish.
