Aussie Asian Wallaby Salad

Ingredients

 

●      2 tsp olive oil

●      1 pkt wallaby fillets, plain or marinated

●      A big handful of mixed salad leaves

●      ½ cup chopped mint

 

Dressing

●      4 tbs fish sauce

●      2 tbs redcurrant jelly

●      4 tbs rice vinegar

●      2 tsp soy sauce

●      1 spring onion, finely diced

Method  

  1. Heat oil in a pan over high heat. Add wallaby fillets. Caramelise one side, turn and caramelise the other side. This should only take around 2 minutes each side. Remove from the pan and let the meat rest in a warm place.

  2. Whisk together dressing ingredients.

  3. Slice wallaby, being careful to cut at 90 degrees to the grain.

  4. Place the salad leaves on a large platter. Arrange the slices of wallaby on top, drizzle over dressing.

  5. Finally scatter the chopped mint on top. Take to the table and let everyone help themselves!
