Wallaby Wings Curry

INGREDIENTS

Wallaby Wings ( Lenah Game Meats ) 1/2 Kg

Water 3 L

Tomato 300 g (Chopped)

Coconut Oil 1/4 Cup

50 g of (Lamb/Beef/Pork) Fat

Carrot 100 g ( Chopped )

Onion 3 (Sliced)

Salt And Pepper to taste

Turmeric Powder 1 tsp

Curry Powder 3 tsp

Coriander Powder 1 tsp

Green Chili 2

Dried Red Chili 3 ( Optional )

One inch Ginger ( Half Sliced and Half Chopped )

Garlic Cloves 4 ( 2 of them sliced and Other 2 of them Chopped )

Bay Leaf 4

Cardamom 6 Cloves

8 Black Pepper

6 Palm Sugar/ Sugar 50 G ( Optional )

Cinnamon 2 sticks

Almond Powder 50 g

Star Anise 5

Cumin 1 tsp

Half of Lemon

Coriander 1 tsp

Garnish Tomato 3 tsp ( Finely Diced ) Sliced Spring Onion 4 Tsp


Directions: Step 1: Take a medium pot and add 2 L of water and add Sliced ginger , 2 Cloves of garlic, 1 cinnamon ,2 bay leaf, 3 Cardamom,3 Star Anise, 4 cloves, Lemon and then add Wallaby wings and boil for 5 minutes. Remove Wallaby and set aside.

Step 2 Heat up a pot and add tbsp oil and fat and render it down then brown the wallaby wings and take off the meat . In the same pot caramelize the onion in medium heat and add curry powder, rest of cinnamon , bay leafs , cardamom , star anise , cloves, turmeric, coriander powder, cummin powder and gently fry. Add Tomatoes, chilies,rest of ginger garlic and return the wallaby wings Add water , palm sugar,Almond and correct the seasoning Cover the pot and Gently simmer for 2.5 hours on low flame until wallaby wings are tender , Served with rice
