Aussie Asian Fillet Salad

Ingredients
  • 2 tsp olive oil
  • 1 pkt wallaby fillets, plain or marinated
  • A big handful of mixed salad leaves
  • ½ cup chopped mint
  • Dressing
  • 4 tbs fish sauce
  • 2 tbs redcurrant jelly
  • 4 tbs rice vinegar
  • 2 tsp soy sauce
  • 1 spring onion, finely diced
Instructions

    Heat oil in a pan over high heat. Add wallaby fillets. Caramelise one side, turn and caramelise the other side. This should only take around 2 minutes each side. Remove from the pan and let the meat rest in a warm place.

    Whisk together dressing ingredients.

    Slice wallaby, being careful to cut at 90 degrees to the grain.

    Place the salad leaves on a large platter. Arrange the slices of wallaby on top, drizzle over dressing.

    Finally scatter the chopped mint on top. Take to the table and let everyone help themselves!
