Thai wallaby salad

Ingredients
  • 1 pkt wallaby fillet
  • 1 clove garlic peeled
  • 4 tbsp chopped coriander
  • 1 trimmed coriander root - washed & chopped
  • 1 small green chilli - deseeded & chopped
  • 1 of juice lime
  • 1 tsp fish sauce
  • 2 tsp sugar
  • mixed Asian lettuce leaves or similar
  • 1 small cucumber - washed & roughly diced
  • snow pea shoots
  • fresh mint leaves.
Instructions

    Grind the garlic, coriander leaves and root, chilli, juice, fish sauce and sugar in a mortar & pestle until a paste.

    Coat the wallaby with a little olive oil and sear in a hot pan. Cook for a couple of minutes either side. Remove from heat and let sit for 5 minutes. Slice the cooked meat if desired, across the grain & toss in the paste.

    Place the lettuce leaves, cucumber, pea shoots, torn mint leaves & wallaby in a large mixing bowl. Toss gently and serve.
