Wallaby is not a strong gamey meat. It’s very delicate in terms of both flavour and texture and is aptly described as the “veal of kangaroo” or “the pinot noir of red meats”.
In blind tastings, 62% of the participants picked wallaby as the tastiest meat.

Cooking tips
Wallaby is actually really easy to use. Mince, diced and shanks can be cooked exactly like beef or lamb.
Cooking fillets needs a little mind set change. Because wallaby is so low in fat it is easy to overcook it (its fat which retains moisture when you cook other meats). The trick it to get it out of the pan before you over cook it. For more information click below.

Wallaby is wild harvested directly from Tasmanian grasslands. The animals are wild and free, living their natural life without antibiotics, chemicals or human intervention.
