Help! How do I cook wallaby?

It’s really easy!

It’s not as difficult as you may think! Mince, diced and shanks can be substituted into any beef lamb chicken or pork recipe. 

To cook fillets perfectly every time follow these 4 principles.

  1. Allow the meat to come to room temperature before you cook.
  2. Sear it in a hot pan then cook for 2 minutes either side.
  3. Rest in a warm place for 5 to 10 minutes
  4. Slice across the grain to plate. The videos below explain this further.
