Wallaby Kebab Wrap

Ingredients

  • 1 pkt wallaby kebabs (400g)
  • 4 tortilla wraps
  • 100 gm hummus
  • 1 Lebanese cucumber, sliced
  • 1 tomato, cut into small dice
  • 2 tbsp chopped parsley or coriander
  • ½ small red onion, thinly sliced
  • Pickled jalapenos
  • Smoked paprika
  • Olive oil
  • Optional shredded cheese, sour cream, hot sauce

Sear the wallaby kebabs in a pan. Make sure you get all four sides nicely caramelised and well coloured. Allow the kebabs to rest for 3-5 min.

While the wallaby rests, toast the flat bread in a dry pan. Spread the hummus on the flat bread and dust with smoked paprika.

Mix the cucumber, tomato, herbs and onion, drizzle olive oil, season with salt & pepper. You can add lime juice and avocado if you have it handy.

Arrange the salad in the centre of the wrap, place the kebabs on the salad and remove the skewer.

Sprinkle a few slices of pickled jalapeno on top and any other topping you favour. Roll it up and enjoy.

This recipe can be a great way of using up any leftover wallaby you might have. Just slice the wallaby into smaller pieces before placing in the wrap. You can make the wrap with all cold ingredients and pack it for the lunch box. com.
