Wallaby wings are extraordinary, they have a delightful unique texture, mild flavour and when cooked the meat falls off the bones, they are sensational (of course wallaby have wings, they had to get across Bass Strait somehow!).
You can cook the wings in a curry, crumb them or on the grill. They are as versatile as your imagination.
