Wallaby patties

Ingredients
- 2 pkts wallaby mince
- Half a cup breadcrumbs soaked in half a cup milk
- 1 onion, finely chopped
- 1 garlic clove, minced
- 2 tsp Dijon mustard
- 1 tbs Worcestershire sauce
- 2 tbs tomato paste
- 2 eggs, whisked
- 1 carrot, grated
- 1 zucchini, grated and excess moisture squeezed out
- 100 Optional, gm grated parmesan
- Salt and freshly ground black pepper, to taste
- Fresh herbs eg parsley, basil, oregano, chopped
Place all the ingredients in a large bowl and mix well by hand.
Form patties by hand. I like to them around 100 gm ea
Patties can be made the day prior to cooking and stored in a sealed container in the fridge
To cook, heat a frypan on high. When hot add olive oil.
Cook the burgers until well cooked through. This will take 15 to 20 minutes
