Wallaby Wings with BBQ Glaze

Ingredients
- 10 Wallaby wings
- Water to cover
- ½ onion
- 2 cloves of garlic, sliced
- 1 inch ginger, sliced
- ½ tsp salt
- BBQ Glaze
- 4 tbsp BBQ sauce
- 1 tbsp Worcestershire sauce
- 1 tbsp light soy
- 1 tbsp dark soy
- 1 tsp Cumin powder
- 1 tbsp Chili powder (optional)
- 1 tbsp Smoked Paprika powder
Simmer the wallaby wings with garlic, ginger and salt until tender, about 90 minutes
While the wings are simmering mix together the ingredients for the glaze and keep aside.
Once tender, allow the wings to cool in the stock overnight. Once cooled they can be removed from the stock and kept 3-4 days in the fridge until needed, (allowing you to get prepared ahead)
Coat the wings in the BBQ glaze and place on a baking paper and cook in a pre-heated 200c oven for 15 min. You can also put them in an air fryer for a great result.
Enjoy these sticky “wings” with a little salad.
