Braised diced wallaby and mushroom

Ingredients
- 1 pkt / 500g diced wallaby
- 1 small onion, thinly sliced
- 1 carrot sliced
- 2 cloves of garlic
- 200 g mushrooms, a mix of oyster mushrooms and Swiss brown works very well.
- 2 tbsp Worcestershire sauce
- 1 tsp Vegemite (or dark soy sauce)
- 1 -2 sprigs of Rosemary
1. In a large pan or pot, heat a little oil and sauté the wallaby until lightly coloured.
2. Add in the vegetables and mushrooms in the same pan. Sauté until they start to soften, then add Worcestershire sauce, vegemite and rosemary. Cook for a further minute then add enough water to just cover the meat.
3. Simmer for 75-90min until tender.
4. Thicken the sauce with a little cornstarch if needed.
I like to eat this with roasted potatoes & carrots that’s been cooked with fresh sage.
