Vanilla braised wallaby shanks

Ingredients
- 2 pkts wallaby shanks
- 2 tbs plain flour, seasoned
- 2 tbs olive oil
- 1 large 1 onion and 1 large carrot, chopped
- 2 garlic cloves, crushed
- 1 cup (250 ml)
- 2 cups (500 ml)
- 1 vanilla 1 bean split or 1 tsp vanilla extract
- ¼ cup brown sugar (50gm)
- 2 thyme, Fresh bay leaves
- Mashed potato and green veges or salad to serve
Preheat oven to 160 degrees.
Toss wallaby shanks in seasoned flour.
Heat oil in a large heavy pot. Brown shanks over medium high heat for 2 minutes either side or until sealed. Remove.
Cook onion, garlic, carrot. Add wine, stock, vanilla, sugar and herbs. Bring to simmer. Add shanks back in. Seal pot well and place in warmed oven. Cook for 3 hours. Serve with mashed potato and veges or salad.
